1.Peel and devein the prawns, leaving the tails intact.
2.In a large bowl, combine prawns, juice, oil and garlic. Cover and refrigerate for 1 hour.
3.Cut onions into 4cm lengths. Thread 3 prawns onto each skewer, placing a piece of onion between each prawn.
4.Cook skewers on a heated, oiled grill pan (or grill or barbecue) for 2-3 minutes, or until browned on both sides and just cooked through. Serve with lime wedges, if desired.
Not suitable to freeze. Not suitable to microwave. You will need to soak 12 bamboo skewers in water for at least 1 hour before using. If you are using metal skewers, oil them first to prevent the prawns sticking. And don’t forget, they will be very hot after cooking! Reserve the prawn shells to make a prawn bisque, if desired.
