Mayonnaise dressing

Method

1.Boil, steam or microwave potato until tender; drain. Rinse under cold water; drain again. Place potato in medium bowl; lightly crush with back of fork (there should still be lumps).
2.To make mayonnaise dressing, whisk mayonnaise, vinegar, mustard and oil in small bowl until smooth; stir in onion and parsley. Season to taste.
3.Halve cucumber lengthways; discard seeds with teaspoon. Slice cucumber thinly.
4.Add cucumber, ham and dressing to potato; toss gently to coat. Stand 15 minutes.
