Method

1.Combine lamb, garlic and mint in a large bowl and season. Using damp hands, shape mixture into four even-sized patties.
2.Heat oil in a large frying pan, cook patties for 5 minutes each side or until browned and just cooked through.
3.Preheat grill. Meanwhile, cut bread into four pieces, split each piece in half. Toast both sides under hot grill.
4.Sandwich tzatziki, watercress, beetroot and patties between bread pieces.

Patties tend to shrink when cooking, so make sure you make them about 12cm (4¾-inch) in diameter.
