Method

1.In a bowl, combine chicken, soy sauce and honey. Set aside for 5 minutes to marinate.
2.Drain chicken and reserve marinade. In a large wok or frying pan, heat oil on high. Add chicken and stir-fry for 2-3 minutes, until just cooked through. Remove from wok and set aside.
3.Add carrot, garlic, ginger, chilli and reserved marinade to wok and stir-fry for 3-4 minutes. Add water, capsicum, celery and bok choy stems, and cook a further 1-2 minutes.
4.Return chicken to wok with noodles and buk choy leaves. Toss until well combined and heated through. Serve with extra chilli and coriander leaves.

Fresh noodles can be used instead of dry – simply soak in hot water and separate with a fork.
