Method

1.Heat a char-grill on high.
2.Brush steak with half oil; char-grill 2-3 minutes each side. Transfer to a plate. Cover loosely; rest 5 minutes. Slice thinly.
3.Meanwhile, spread half tortillas with guacamole; top evenly with cheese, onion and coriander. Finish with steak and a second tortilla.
4.Heat remaining oil in a frying pan on high. Cook each quesadilla 1-2 minutes each side, until golden.
5.Top with sour cream and extra coriander to serve. Accompany with salsa.

Make your own guacamole by mashing 2 peeled and seeded avocados with 1 small, diced red onion, juice of 1 lime and 1/2 cup chopped coriander. Season to taste.
