Caper dressing

Method

1.Remove flesh from bug tails. Roughly chop. Place in a large bowl with cos leaves, mangoes, capsicums and chives.
2.To make dressing: in a jug, whisk all ingredients together. Season to taste. Drizzle dressing over salad, tossing gently.

You can replace the Balmain bugs with prawns, lobster or cooked fish.
