Gluten-free pear, walnut and maple steamed pudding

Method

1.Preheat oven to moderate, 180°C. Grease an 8-cup ovenproof casserole dish. Place in a large baking dish.
2.In a frying pan, melt first measure of butter on high. Stir in first measure of maple syrup.
3.Add pears and cook for 3-4 minutes until just tender. Stir walnuts through.
4.In a small bowl, using an electric mixer, beat second measure of butter, second measure of maple syrup and vanilla until creamy.
5.Add eggs, one at a time, beating well after each. Fold in flour alternately with milk. Spoon into dish. Ripple pear mixture through the surface.
6.Cover dish with baking paper and foil. Pour in enough hot water to come halfway up sides of dish. Cover the whole pan with tight-fitting foil. Bake for 35-40 minutes until cooked when tested. Serve topped with raspberries, micro mint, a dusting of icing sugar and a drizzle of maple syrup.
