Method
1.Preheat oven to 200°C (180°C fan-forced). Heat oil in a frying pan over moderate heat. Add onion. Cook, stirring, 3 minutes, or until soft. Add mince. Cook, stirring to break up lumps, 5 minutes, or until browned. Add cumin and coriander. Cook, stirring, 1 minute or until fragrant. Season.
2.Place lebanese bread on 2 separate baking trays. Top evenly with beef mixture. Bake 10 minutes, or until bread is golden and crisp.
3.Combine yoghurt and juice in a bowl. Top flatbread with tomato and cucumber. Drizzle with yoghurt. Serve with salad.
You can use lamb mince instead of beef. Use a vegetable peeler to cut cucumber into ribbons. Make ahead: Cook mince mixture a day ahead. Cover; refrigerate.
