1.Preheat oven to 200°C
2.Place potatoes in a large baking dish. Toss with oil. Season to taste. Bake for 20 minutes. Sprinkle leek over potatoes. Bake further 5 minutes, until tender.
3.Stir zucchini and tomatoes through potato mixture. Place fish on top.
4.Bake further 10-15 minutes until fish flakes when tested with a fork. Serve with lemon wedges.
You can add a few sprigs of thyme to potatoes before baking.
