White chocolate baklava cheesecakes

These individual cheesecakes are perfect for a small afternoon sweet treat. Made with flaky filo pastry and drizzled with sticky honey, they feature similar flavours to the traditional Greek baklava slice. Their creamy white chocolate centre makes them even more delicious.

Ingredients

Method

1.Preheat oven to moderate, 180°C. Lightly grease a 12-hole muffin pan.
2.In a small jug, mix butter and honey together. Working with one sheet of filo at a time, place on clean bench and brush with butter mixture. Repeat with remaining pastry and butter mixture, stacking sheets as you go. Cut stack into 12 even squares.
3.Ease each square into muffin recesses, brushed side up. Bake 6-8 minutes, until crisp and lightly golden.
4.Meanwhile, in a medium bowl, using an electric mixer, beat cream cheese, ricotta, chocolate, egg, cream, flour and cinnamon together until smooth.
5.Spoon mixture evenly among filo cases. Bake 12-14 minutes, until just set. Cool completely in pan. Top with nuts. Drizzle with extra honey, to serve.

These cases are baked buttered side up to prevent honey mixture sticking to pan.
