Who doesn't love ice-cream? This Italian-inspired cassata is packed with berries, pistachios, chocolate and Turkish delight. It will be a hit with all ages.
1.Line the base and sides of an 8cm x 25cm bar pan with plastic wrap.
2.In a large bowl, combine ice-cream, Turkish delight, berries, pistachios and chocolate. Spoon into prepared pan, smoothing top. Cover with foil and freeze overnight or until firm.
3.Remove log from pan and remove plastic wrap. Serve sliced with extra berries or cherries.
You’ll need half a punnet of each berry. Allow to rest at room temperature for 5 minutes before attempting to slice. This can be made up to 2 weeks ahead and stored, tightly covered, in the freezer. You can use other fruit of your choice, such as passionfruit, mixed stone fruit or chopped mango.
