Ingredients
Method
1.Preheat the oven to 180°C.
2.Arrange the rhubarb in a single layer in 30cm x 18cm baking dish.
3.Sprinkle over the brown sugar, orange zest, cinnamon, vanilla and orange juice.
4.Pop in the star anise at either end of the dish.
5.Cover and bake for 20 minutes until rhubarb is tender but not mushy.
6.Allow to cool to room temperature.
7.Spoon the yoghurt into a bowl and drizzle with maple syrup.
8.Serve the rhubarb with a dollop of maple yoghurt.
