Method

1.Preheat oven to moderate, 180°C. Grease and line a 25 x 35cm pan with baking paper.
2.Combine flour, sugar, soda, cinnamon and salt in a food processor. Add butter and pulse until mixture comes together. Press firmly into tray. Bake for 25-30 minutes, until golden.
3.To make peanut brittle, in a medium heavy-based saucepan, combine sugar, syrup and water. Stir over low heat until sugar dissolves. Bring to boil. Boil, without stirring, for 8-10 minutes, until light golden. Remove from heat and stir butter and soda through.
4.Return mixture to heat. Bring back to boil (148-154°C), without stirring, until hard crack stage. Remove from heat and stir roasted peanuts through. Pour over base.
5.Use a sharp knife to score surface into 18 rectangles. When almost set, cut into slices. Allow peanut brittle bars to set completely at room temperature.
