Method

1.Spoon ice-cream into 8 x 1/2 cup moulds; freeze 2 hours, or until firm.
2.Cut cake into 1cm-thick slices. Using a 6.5cm cutter, cut into 8 rounds.
3.Place rounds onto a large baking tray. Top each with peach slices; invert moulds on top. Freeze while preparing meringue.
4.In a clean bowl, beat egg whites using an electric mixer until soft peaks form. Gradually add sugar, beating between additions, until thick and glossy.
5.Preheat oven to very hot, 220°C.
6.Working quickly, spread meringue over each ice-cream stack. Bake 1-2 minutes, until meringue is browned lightly.
7.Serve bombes immediately.
