Method
1.In a large jug, combine milk and 2 teaspoons sherry. Sprinkle pudding mix over and beat 1 minute, using an electric mixer. Set aside 5 minutes to thicken.
2.Beat pudding mixture with a fork to remove some of the air bubbles.
3.Dip one side of each biscuit briefly into extra sherry. Spread thickly with vanilla mix. Sandwich biscuits together and stand on their side on a serving platter to form a long log.
4.Spread cream all over. Cover and chill overnight to allow biscuits to soften. Sprinkle with chocolate and cut into slices to serve.
