Minted fruit salad and yoghurt

Fresh fruit is a lunchbox staple. This simple fruit salad makes 4 servings and you can choose which fruit you use depending on the season. In hot weather, pack with an ice block to keep the food cool.

Method

1.Combine strawberries, rockmelon, grapes and mint leaves in a large bowl. Set aside for 10 minutes.
2.Divide fruit among 4 airtight containers and drizzle with any juices. Pack into lunch boxes with tubs of yoghurt.

Adapt this salad to the season by using different fruits.
