Method
1.Preheat oven to 160ºC and line the base of a 21cm springform cake tin.
2.In the food processor combine butter, icing sugar, flour and vanilla. Blend well.
3.Press mixture into the base of tin, then bake for 10-12 minutes, until pale golden.
4.In a clean food processor blend the cream cheese, mascarpone, honey, caster sugar, lemon juice and zest, eggs and cream until smooth (about 3-4 minutes).
5.Pour cream cheese mix over base and bake for 1 hour, or until set in the centre. Heat lemon slices and honey until syrupy and spoon over the cheesecake just before serving.
