Method

1.Preheat oven to 200°C. Grease a 12-hole (30ml) madeleine tin.
2.Beat eggs, caster sugar, 2 tbsp sifted icing sugar and rind in small bowl with electric mixer until pale and thick.
3.Meanwhile, triple-sift flours; sift flour over egg mixture. Pour butter and juice down the side of the bowl then fold ingredients together.
4.Drop rounded tablespoons of mixture into each hole of tin. Bake about 10 minutes. Tap hot tin firmly on bench to release madeleines onto wire rack to cool.
5.Dust with remaining sifted icing sugar to serve.
