Method
1.Sift flour, baking powder, salt and soda together into a large bowl.
2.In a medium bowl, beat sugar and eggs with an electric mixer until pale. Beat in oil and vanilla. Stir into flour mixture with buttermilk.
3.Turn dough onto a lightly floured surface. Knead gently. Roll out until 1cm thick.
4.Using an 8cm floured donut cutter, cut 16 rounds (or use 8cm and 3cm cutters).
5.In a large saucepan, heat oil to 190°C. Cook donuts in four batches for 1-2 minutes on each side, turning once.
6.Remove with a slotted spoon and drain on a paper towel. Toss in cinnamon sugar and serve.
-Only fill saucepan halfway with oil. Oil is ready when a small amount of dough sizzles when added.
