Method
1.Combine broken biscuits, glace cherries and ginger in a large bowl.
2.Melt butter in a small saucepan on low heat. Mix in brown sugar and cocoa, stirring until sugar dissolves. Beat in egg and vanilla essence.
3.Mix butter mixture and biscuit mixture, until well combined.
4.Sprinkle coconut onto a 30cm length of foil. Pile biscuit mixture on top. Roll into a log, pressing firmly. Seal with plastic wrap. Chill 3 hours, or until firm. Slice to serve or package as a gift.
If preferred, other dried fruit may be used in place of glace cherries.
