Method
1.Line eight 1-cup (250ml) moulds with plastic wrap.
2.Combine fruit, marmalade, liqueur, rind and mint in medium bowl.
3.Place ice-cream in large bowl, fold in fruit mixture. Divide mixture among prepared moulds, cover with foil. Freeze 3 hours or overnight.
4.Make bitter orange sauce. Combine ingredients in small jug.
5.Turn puddings onto serving plates, serve with bitter orange sauce.
