For Christmas pudding decoration
Method
1.Using a food processor; process biscuits to fine crumbs. Add NESTLÉ HIGHLANDER Sweetened Condensed Milk, rum and 1 cup coconut. Process well to combine. Transfer to a bowl. Refrigerate for 30 minutes or until mixture is slightly firm enough to roll.
2.Roll the mixture into balls around 1 ½ – 2 cm in diameter and chill on a tray to firm them again.
3.Place NESTLÉ BAKERS’ CHOICE Dark Melts and oil in a microwave-safe bowl; microwave uncovered on MEDIUM (50%) for 1 minute; stir. Repeat process in 30 second intervals until melted and smooth.
4.Using two forks; dip balls into melted choc mixture. Place on trays lined with baking paper. Sprinkle with remaining coconut. Stand for 30 mins or until set. Or for Christmas pudding truffles melt the NESTLÉ BAKERS’ CHOICE White Melts in a small bowl on MEDIUM in 30 second increments until melted. Use a teaspoon to trickle a little on the top of each truffle and top each with a little piece of glace cherry.
Note
- You could use halved red jelly beans in place of glace cherries as decorations. For an alcohol free version simply omit the rum. Try other decorations such as silver balls, slivered almonds or chocolate hail.
