Royal icing
Method
1.Using a fork, combine cake crumbs and jam in a small bowl. Shape level tablespoons of mixture into balls, squeezing firmly. Place balls on a baking paper-lined tray, freeze 1 hour or refrigerate 3 hours or overnight until firm.
2.Melt white Melts. Pour into a heatproof jug. Dip the end of one lollipop stick into Melts, then push it about halfway into a ball of cake. Return to tray. Repeat with remaining sticks and cake balls. Freeze for about 5 minutes to set.
3.Re-melt white Melts, if necessary. Dip a cake pop into the Melts, rocking back and forth to coat (don’t swirl the pop, or it’ll break). Allow excess white Melts to drip back into the jug. Stand cake pop upright in a styrofoam block until set. Repeat with remaining cake pops. Re-melt Melts as required.
4.Tint leftover melted white Melts blue. Carefully trim 4.5cm (1¾ inches) from the wide end of the cones, discard trimmings. Dip the edge of the cone in blue-coloured Melts. Place cone on top of a cake pop to make the clown’s hat. Working quickly attach WONKA NERDS. Hold in place for about a minute or until just set. Repeat with the remaining cones, Melts and WONKA NERDS. Attach the WONKA Gobstoppers to top of hats with a little melted Melts. Stand upright until set.
5.To make royal icing, sift icing sugar through a fine sieve. Lightly beat the egg white into a small bowl until mixture is just broken up (do not whip into peaks). Beat in the icing sugar 1 tablespoon at a time, until it reaches desired consistency. Using a wooden spoon mix in the lemon juice.
6.Spoon royal icing into paper piping bag, snip a small opening in the tip. Using royal icing, secure ALLEN’S JAFFAS as noses, and secure a piece of sliced ALLEN’S Ripe Raspberries to form the mouth. Secure two pieces of ALLEN’S FUNFAIR THRILLS Jelly Beans on each clown for the rosy cheeks.
7.Using a small sharp knife, cut small crosses from licorice, secure with royal icing to form eyes. Thread 5 cupcake cases onto sticks to form clown’s collar.
