1.

Preheat the oven to 180°C. Butter the base and sides of a 6-cup-capacity baking dish or spray it with oil.

Sift the flour, cocoa and salt into a large mixing bowl. Stir in the sugar and make a well in the centre.

In a separate bowl, whisk together the butter, milk, egg and vanilla essence.

Pour the wet butter and milk mixture into the dry ingredients. Use a whisk to gently and quickly mix the ingredients together into a smooth batter.

Stir in the chocolate chips. Pour the mixture into the prepared baking dish and smooth the top with a spatula.

To make the topping, combine the sugars and cocoa. Sprinkle the topping over the chocolate mixture, then pour the boiling water evenly over the sugar mixture.

7.

Bake in the preheated oven for 25-30 minutes, or until a skewer inserted in the middle of a pudding comes out clean. Serve the chocolate pudding hot with a dollop of softly whipped cream.

  • You can add a handful of chopped walnuts to the cake mixture.
