Ingredients: 150 gram dark chocolate, roughly chopped, or choc buttons; 200 gram butter; 1 cup brown sugar; 1 teaspoon vanilla; 4 eggs; 1 cup plain flour; 3/4 cup mini marshmallows or halved larger ones; icing sugar, for dusting

Method

1.Preheat the oven to 180°C. Line a 27cm x 18cm slice tin with baking paper.

2.Combine the chocolate, butter, sugar and vanilla in a microwave or heat-proof bowl and heat until melted and smooth. Cool for at least 15 minutes.

3.Whisk in the eggs, one at a time, then fold in the flour and three-quarters of the marshmallows.

4.Pour into lined tin, sprinkle with remaining marshmallows and bake for 20-25 minutes (test with a skewer – the brownie is done when the top is firm but the centre is still slightly damp).

5.Dust with icing sugar and serve with cream or ice cream.
