1.In a food processor, combine [avocado flesh](https://www.foodtolove.co.nz/7-things-every-avocado-addict-needs-to-know-1949|target=”_blank”), cocoa, vanilla, maple syrup and coffee. Process until smooth and glossy. You will have to stop and scrape down the sides several times.
2.Divide between glasses, garnish with chocolate-coated coffee beans, roughly chopped, and serve.
This dessert can be made a day ahead and kept in the fridge (the coffee flavour develops the longer it is left). As this mousse is quite rich, a little goes a long way!
