1.Line a 20cm square cake pan with baking paper, extending the paper 2cm above sides.
2.In a food processor, combine nuts, coconut and figs. Process until mixture binds together. Press evenly over base of pan.
3.In a clean food processor, combine avocados, lime juice, honey and vanilla seeds. Process until smooth and creamy. Add oil, butter and 1 teaspoon lime zest, blending to combine. Pour over base. Chill overnight.
4.Using paper, remove slice from pan. Top with raspberries, extra coconut and remaining lime zest. Serve in slices.
Note
- Processed honey has been heated, lessening its health benefits, so use certified raw honey, raw maple syrup or raw agave syrup, available at health food shops and some supermarkets.
