Method

1.Spoon ice-cream into a large bowl. Beat in white chocolate, rosewater and colouring. Fold cherries through. Pour into a freezer container. Freeze overnight, or until firm.
2.Place an oven tray lined with baking paper in the freezer.
3.Spoon 1/4 cups ice-cream mixture onto rippled side of one biscuit. Sandwich together with a second biscuit, gently pressing together so ice-cream reaches edge. Run a butter knife around edges to smooth. Place on tray. Repeat with remaining ingredients.
4.When ready to serve, stack ice-cream sandwiches on a plate. Drizzle with dark chocolate and decorate with extra cherries. Serve straight away.
