Method
1.Preheat oven to moderate, 180°C (160°C fan-forced). Line a 12-hole muffin pan with paper patty cases.
2.Sift flour and bicarbonate of soda together into a bowl.
3.In a medium bowl, combine sugar, cream, oil and vanilla. Fold in sifted flour.
4.Spoon mixture into patty cases until they are two-thirds full. Top with sliced apple, raspberries and almonds. Bake for 25-30 minutes until cakes are cooked when tested with a skewer.
5.Serve cakes dusted with icing sugar.
For a variation, finely chop apple and fold it through mixture. Top with almonds and a sprinkling of cinnamon sugar, then bake.
