Method
1.Place ice-cream in a large bowl. Using a large metal spoon, fold apple, biscuits, ginger and spice through ice- cream.
2.Spoon into a 10cmx20cm (6-cup) loaf pan. Freeze 4 hours, or overnight, until firm.
Tip: Use other biscuits of choice, such as ginger or chocolate, or use almond bread.
