Caramelised apple
Method
1.Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease a 6-hole texas (large) muffin pan.
2.In a small bowl, using an electric mixer, beat butter, sugar and extract together until light and fluffy.
3.Add eggs one at a time, beating well after each addition. Lightly fold in flour and almond meal alternately with milk.
4.Spoon mixture into prepared muffin pan until each hole is 2/3 full.
5.Bake 20-25 minutes, until cooked when tested. Cool in pan for 5 minutes before turning onto a wire rack to cool completely.
6.Meanwhile, to make caramelised apples, melt butter in a large frying pan on medium. Saute apple for 4-5 minutes, until just tender. Add sugar and cream. Cook, Stirring, for 1-2 minutes, until sugar dissolves. Bring to boil. Simmer for 3 minutes.
7.Serve cakes warm or cold topped with apples and almonds. Drizzle with the caramel sauce.
It is a good idea to have the butter at room temperature for easy creaming.
