Method
Sift the flour, baking powder and salt into a large mixing bowl. Make a well.
In another bowl or jug, whisk together the egg yolks, milk, oil and vanilla essence until well combined. Pour the mixture into the well in the dry ingredients and use a whisk to mix it all together until a smooth batter forms.
Last, beat the egg whites with an electric beater until soft peaks form. Add the sugar and continue to beat until the mixture is thick and shiny, about 2-3 minutes. Use a spatula to gently fold the egg whites into the batter.
Heat the waffle maker. Pour in half a cup of the waffle mixture. Close and wait 2 minutes before checking the waffle is cooked (the steam will reduce when the waffles are done).
Place the cooked waffles on a cooling rack or on a rack in a warm oven. Repeat with the rest of the mixture. Serve the waffles with a dollop of whipped cream, a few berries and a drizzle of maple syrup. Dust lightly with a little icing sugar if desired.
