1.Preheat oven to hot, 200°C (180°C fan-forced).
2.In a medium bowl, beat egg and caster sugar together. Whisk in flour alternately with combined milk and soda to achieve a smooth batter. Stir in butter. Set aside.
3.Combine apple and brown sugar in a small baking dish. Bake for 10 minutes, until apple is tender.
4.Heat a large frying pan on medium. Spray lightly with oil. Drop tablespoonfuls of batter into pan in batches. Cook 1-2 minutes, until bubbles form on the surface. Turn and cook for 1 minute. Repeat with remaining batter.
5.Serve warm, topped with apples, raspberries and maple syrup.
This batter could made in a food processor or blender – or if your hand-made batter is lumpy, simply whiz it with a hand-blender.
