Omelette hearts with smoked salmon

Cute as a button, these heart-shaped omelettes served with fresh smoked salmon are a perfect breakfast treat for a special occasion or a cosy weekend brunch.

Ingredients

Method

1.In a jug, whisk together eggs, parmesan and chives. Season to taste.
2.Heat a non-stick frying pan on high. Brush a heat-resistant, 8cm heart-shaped cutter or mould with butter. Place in pan. Fill with egg mixture. Cook for 1 1/2-2 minutes, until firm. Repeat with remaining mixture.
3.Transfer omelette hearts to plates

If preferred, remove mould when set, flip omelette and cook for a few seconds.
