Method

1.Preheat oven to 180°C. Line a 12-hole muffin pan with paper patty eases or spray lightly with oil.
2.Sift flour into a large bowl. Stir in sugar, poppy seeds and zest. Make a well in centre of dry ingredients.
3.In a jug, blend together milk, juice, butter and egg. Mix into dry ingredients until just combined (about 16 strokes).
4.Spoon mixture into pan until 2/3 full. Bake for 15-20 minutes, until cooked when tested. Transfer to a wire rack to cool. Dust with icing sugar. Store in an airtight container.

The milk may curdle when combined with lemon juice, but don’t worry-it won’t affect the end result.
