1.In a large bowl, combine ham and flour. In a jug, whisk together milk, eggs, mustard and chives. Season to taste and gradually beat into flour mixture.
2.Heat oil in a large frying pan on medium. Working in 3 batches, cook heaped tablespoons of mixture 2-3 minutes, until bubbles appear. Turn fritters and cook 1 minute, until golden and cooked through.
3.Top with creme fraiche, chutney and extra chives to serve.
