Ingredients

Method

1.In a medium bowl, whisk ricotta and yoghurt together for about 1 minute or until mixture is smooth.
2.Slice cheeks from mangoes; remove skin, cut each cheek in half.
3.On a heated oiled grill plate (or grill or barbecue), cook mango for about 1 minute each side, or until browned both sides.
4.Just before serving, split muffins; toast both sides.
5.Place half a muffin on each serving plate; top with ricotta mixture and mango, drizzle with passionfruit pulp. Serve.

If mangoes are unavailable, use pineapple. You need two passionfruit for this recipe.
