Method
1.Cut the baguette on an angle into thick slices about 20mm wide.
2.Whisk eggs, 2 tablespoons of the maple syrup, milk and cinnamon.
3.Heat 30g of the butter in a frying pan, dip each slice of bread into the egg mixture until coated but not soggy. Fry gently for 2-3 minutes each side until golden; continue with remaining bread.
4.Heat remaining 20g of butter in the same pan, and sauté bananas and pecans until coloured. Add a drizzle of maple syrup and allow to caramelise.
5.Serve bread pieces stacked with a dollop of cream. Top with caramel bananas and golden nuts, and drizzle over remaining maple syrup.
Note
