Croque madame
1.Preheat oven to hot, 200°C.
2.Place four bread slices on an oven tray. Spread evenly with mustard. Top with ham.
3.Spread half the sauce evenly over the ham. Cover with the remaining bread slices. Top with remaining sauce. Sprinkle with cheese.
4.Bake for 12-15 minutes, until golden.
5.Meanwhile, heat a lightly greased non-stick frying pan. Fry eggs for 2-3 minutes, until set.
6.Top each sandwich with an egg. Serve halved, with salad.
Bechamel sauce
7.Melt butter in saucepan on high. Stir in flour, cook for 1 minute. Remove from heat.
8.Stir in milk, return to heat. Cook, stirring, until sauce boils and thickens. Season to taste.
To fry eggs, break each into a lightly greased, heavy-based frying pan (or greased egg ring) on medium heat. Cook, uncovered, for. 2-3 minutes, until egg-white is set and yolk is cooked to taste. ; Use an egg slice to remove.
