Method
1.In a large bowl, whisk together milk, eggs, icing sugar, vanilla and zest. Set aside for 15 minutes.
2.Melt half the butter in a large frying pan on medium heat.
3.Dip 2 slices brioche in egg mixture, turning to coat. Place in pan and top each with chocolate. Dip another 2 slices of brioche in egg mixture. Place on top of chocolate to form a sandwich. Cook for 5-8 minutes. Turn over and cook for another 3-4 minutes, until golden and chocolate melts.
4.Melt remaining butter in same pan. Repeat step three using remaining brioche, egg mixture and chocolate. Dust with cocoa and serve.
Plain bread or fruit bread can be used instead of brioche. Milk chocolate can be used in place of dark. Make sure the bread is well soaked in the egg mixture before cooking.
