1.Grease and line a 3cm-deep 28 x 18cm (base measurement) slice pan with baking paper, extending paper at long sides for handles. Combine muesli, almonds and chocolate in a large heatproof bowl.
2.Combine butter, essence, honey and sugar in a small saucepan over moderate heat. Cook and stir for 3 minutes or until sugar has dissolved. Bring to the boil. Reduce heat to low. Simmer, without stirring for 5 minutes or until a little of the mixture forms a soft ball when dropped into ice-cold water. Remove pan from heat. Stand for 5 minutes to cool.
3.Add butter mixture to muesli mixture; stir to combine. Spoon into prepared pan. Using a large metal spoon, press down firmly; smooth surface. Scatter with extra chocolate; press down firmly. Stand at room temperature to cool. Transfer to a chopping board. Slice.
To make it easy to pour honey from measuring jug, warm gently in the microwave or dip into hot water.
