Method

1.Heat corn in a medium microwave-proof bowl in microwave oven on HIGH (100%) for about 30 seconds; stir in cheese and spinach. Season to taste.
2.Serve toast topped with corn mixture.

Toast is best “done” on one side only for this kind of topping.
