Buttermilk waffles with spicy maple bacon

1.In a large bowl, sift combined flours, sugar, salt and baking soda together.
2.In a jug, whisk buttermilk and egg together. Make a well in the centre of flour mixture. Gradually whisk in buttermilk mixture until smooth. Set aside, covered, for 30 minutes.
3.Preheat oven to moderate, 180°C. Line an oven tray with baking paper.
4.In a bowl, toss bacon and syrup together. Arrange in a single layer on tray. Drizzle with any remaining syrup. Bake for 15-20 minutes until golden, sticky and crispy. Reduce oven to very slow, 120°C.
5.Preheat a waffle iron following instructions. Spray with oil. Pour ½ cup batter into centre of waffle iron.
6.Close lid and cook for 3-4 minutes until golden. Transfer waffle to wire rack. Place in oven to keep warm. Repeat with remaining batter, spraying the iron with oil between each.
7.Serve waffles topped with bacon, fried eggs, asparagus and capsicum, adding an extra drizzle of maple syrup.

To fry eggs, heat a little oil or butter in a frying pan on high. Break eggs into pan. Cook for 2-3 minutes until cooked to taste.
