Breakfast wrap

Cripsy, golden bacon is beautiful served with hard-boiled eggs, spinach, tomatoes and barbecue sauce, rolled tightly to create a tasty breakfast wrap.

Ingredients

Method

1.Cook eggs in rapidly boiling water in saucepan 6-7 minutes. Cool. Peel. Slice into quarters.
2.Meanwhile, heat a large frying pan on high. Cook bacon 2-3 minutes each side, until golden.
3.Spread each slice of bread with 1 tablespoon sauce. Arrange spinach down centre of bread.
4.Top each evenly with bacon, egg and tomato. Season to taste. Roll up to secure.

If you prefer soft-boiled eggs, boil for 3-4 minutes. Remove from saucepan and place in cold water to stop cooking process. To save time, hard-boil eggs the previous night and keep in the fridge.
