Method
1.Lightly grease an 18x25cm (6 cup) deep rectangle baking dish.
2.In a jug, whisk eggs, cream, milk, vanilla and 1 tbsp maple syrup. Set aside.
3.Roughly chop half the bacon. In a frying pan, cook chopped bacon on medium heat, 4-5 minutes until crispy. Cool.
4.Spread brioche slices liberally with butter. Layer in dish (trimming to fit) with 2 of the bananas and cooked bacon. Finish with a layer of brioche slices.
5.Carefully pour egg mixture over brioche, pressing slightly. Set aside 30 minutes to absorb. Preheat oven to moderate, 180C.
6.Cover dish with foil. Bake 50 minutes. Remove foil and bake a further 10-15 minutes until cooked when tested (the tip of a knife will be clean when removed from the centre). Set aside 10 minutes.
7.Meanwhile, in a medium frying pan cook remaining bacon on high, 4-5 minutes until crispy, adding remaining sliced banana and maple syrup for final 2 minutes.
8.Serve bake dusted with icing sugar and topped with maple bacon banana mixture.
If you don’t have brioche, try using fruit bread, croissants or sliced scones.
