Apple pecan bread

Somewhere between a slice, a bread and a cake, this divine dessert pecan bread pairs crunchy, nutty pecans with soft, syrupy apples.

Caramelised apple

Method

1.Preheat oven to moderate, 180°C (160°C fan-forced). Lightly grease and line a 10cmx20cm loaf pan with baking paper.
2.Sift flour, baking powder and cinnamon together into a large bowl. Stir in the sugar, apples and pecans.
3.In a large jug, combine butter, eggs and vanilla. Fold into dry ingredients, until combined. Pour mixture into pan.
4.Bake 55-60 minutes, until cooked when tested with a skewer. Serve warm with caramelised apple.
5.To make caramelised apple: Melt butter and brown sugar in a frying pan. Add apple slices. Stir over a low heat until caramelised and tender.
