Bishop’s cake

Traditionally served at Christmas time, this sweet, fruity cake is packed full of green and red glace cherries and crunchy nuts to produce a flavour and texture sensation.

Ingredients

Method

1.Preheat oven to 150°C (130°C fan-forced). Grease and line a 21cm x 11cm loaf pan.
2.Combine nuts, dates and cherries in a bowl. Sift flour, sugar, baking powder and salt over fruit mixture. Mix well.
3.Whisk eggs and vanilla essence, until frothy. Pour over batter, stirring well. Spoon into prepared pan.
4.Bake 1 hour 45 minutes, until a skewer comes out clean. Remove from pan and cool on a wire rack.

Use a sharp serrated knife to cut cake into very thin slices before serving.
