1.Combine strawberries, orange juice, liqueur and 1 tablespoon of icing sugar in a bowl and soak for 15 minutes. Sprinkle each sponge half with sherry.
2.Place mascarpone, cream, remaining icing sugar, orange rind and juice in a bowl and mix until smooth.
3.Place one sponge half, sherry-side up, on a serving plate. Spread with one-quarter of mascarpone mixture and top with drained strawberries. Spread with one-third of remaining mascarpone mixture. Top with remaining sponge half, sherry-side down.
4.Using a spatula, spread remaining mascarpone mixture around sides of cake and press in almonds. Dust with extra icing sugar and cut into slices to serve.
