Ingredients

Method

1.Cut chicken into 3cm cubes. Place in a shallow bowl.
2.Process eschalot, ginger, chilli, lemongrass, spices and salt to taste in a food processor until a paste forms. Add to chicken and toss to coat.
3.Line a baking tray with foil and spray with cooking oil. Thread chicken onto skewers and place on prepared tray. Cook under a preheated grill for 5-10 minutes, turning once, until browned and cooked through. Serve with steamed rice, pineapple, and cucumber strips.

You could also serve these chicken pieces rolled up in crisp lettuce leaves.
