Method

1.Preheat oven to 190°C.
2.Sieve flour, a pinch of salt and the mixed spice into a bowl. Cut butter into small cubes and rub through dry ingredients. Mix in sugar and walnuts. Peel and mash banana. Break eggs into a bowl, beat with a fork, then blend in milk. Pour egg and milk into dry ingredients. Add banana and maple syrup.
3.Mix together with a large spoon, until just combined. Have 12 paper cups set inside a muffin tin, then spoon batter into cups using 2 spoons. Bake for 20 minutes or until well risen and lightly golden. Cool on a wire rack, then dust with icing sugar. Serve warm with butter and maple syrup.
